During boiling, reaction between proteins and tannins occurs which cause a creation of large protein-tannin particles (30-80mm in size) called hot breaks. These breaks are removed using centrifuges, whirlpools and settling tanks. The principle of the process is to use gravity force for separation of particles with different mass density. The disadvantage of these machinery is aeration of hot wort during process.
